Fried Rice: best way to clear out your fridge

Stumped for what to make for dinner? Got a fridge full of random odds and ends needing to be cleaned up? Fried rice is your quick fix answer to all these things!  A tried-and-true favourite in my household, fried rice is a fan favourite and one of those dishes that taste good with any combination of things.  Here's a recent rendition of the dish that I made, and all within an hour!

To make, you'll need:

  • 1 cups of rice or more, depending on how many you are serving
  • 2 cobs of fresh corn, sliced off the cob
  • 1/2 white onion, diced
  • 2 roma tomatoes, diced
  • 1 cup of coarsely chopped gai-choy
  • 1 package of pork chops, or loin, diced
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
Clean and cook the rice, approximately 20 minutes.  While rice is cooking, prepare the corn by boiling in a pot of water for a few minutes until tender.  

Once rice is cooked, take a wok (or large pot) and put on med-high heat.  When the wok is hot, pour 2 tbsp of cooking oil in and when it starts to smoke, add the onions.  Fry the onions for 1 min, then add the pork.  Cook pork until 3/4 cooked and remove from wok and set aside.  Pour in the rice and stir-fry.  If the rice starts to stick a lot to the bottom of the wok, pour a couple tbsp of water into the wok until you hear a "sizzling" sound.  Be careful to only add water as necessary as too much water will make your rice more moist, than crispy; I actually like making my fried rice more "wet" but to each their own!  

After a minute, add in the rest of the ingredients as well as the pork.  Toss and continue cooking for 30 seconds, or until pork is finished cooking.  Add in the soy sauce and oyster sauce and add in more of each until the rice is coated to taste.  Serve immediately.  Serves 2 with plenty of leftovers.

Alternatives that also taste great in fried rice: chinese sausages, mushrooms, baby corn, peppers of all varieties!

  2. I always make fried rice with frozen mixed veggies, scallops, prawns or diced ham, and eggs. Great for lunch!

  5. Veggie fried rice has been my favorite, but I haven't tried bbq pork and chinese sausages. Those and your recipe sound pretty tasty,

  6. PS - There was essentially no sleeping for 4 nights. That and the heat had me in kind of a mood. I'm almost better now. =)

  7. I'm loving fried rice right now as a veggie alternative b/c of the protein I can get w/the egg and/or tofu. I'm also loving putting some kale chips crumbled on top! I didn't put oyster sauce the last time I did fried rice but thanks for reminding me. I like the savoury sweetness it provides
