What's for dinner: Grilled chicken with roast potatoes, kale and mushrooms

Lately, I've been having cravings for freshly cooked and flavourful vegetables rather than a juicy piece of steak.  Perhaps it's because I've been trying to be more healthy and fit lately, or it's just the warm weather making me crave lighter fare, but whatever it is, veggies are the way to go!  This dish is something I whipped up for Mr. Artist and me a couple weeks ago.  It's light, but filling and filled with simple flavours.  I hope you enjoy it too!

To make, you'll need:

  • 2 boneless, skinless chicken breasts
  • 2 stalks of kale, coarsely chopped
  • 1 cup of mushrooms, coarsely chopped
  • salt and pepper to taste
  • 1 lemon
  • 7 nugget yukon gold potatoes, chopped into bite-size pieces
  • 2 tbsp butter
Season the chicken with salt and pepper and place on a hot skillet covered with a thin layer of olive oil.  Cook on each side for 4 mins until all pinkness is gone.

Meanwhile, put potatoes in a salted pot of boiling water and cook for 10 minutes, or until potatoes reach the desired consistency.  The potatoes should be soft and easily fall apart with a fork, but still have enough firmness to be picked up with a fork.  Once done, drain potatoes into a colander.

Once the chicken is done, remove onto a plate and cover to keep warm.  In the same pan, add the mushrooms and cook for a couple minutes in med-high heat.  Once the mushrooms are almost done (they will turn dark, shrink and become soft) throw in the kale.  Don't be alarmed if your pan overflows with kale as it will shrink a ton!  Add a few tbsp of water as needed to keep kale moist as you toss the veggies around on the pan, picking up the flavour bits left by the chicken.  Cook for 1 minute.

Cut chicken into bite-sized pieces, or leave whole and serve with vegetables immediately.  Cut the lemon in half and squeeze half a lemon's worth of juice over each serving of kale.  Dish out the potatoes and dab with the butter, allowing it to melt.  Now eat!
