What is your comfort food? For me, a delicious, saucy stir fry with steamed rice ranks high up on my list of satisfying dinners. Beef and chives stir fry is a common Chinese restaurant staple and it's one of my favourites. Flavourful and steaming hot, it's usually served on a sizzling plate with hot oil. I've never tried making green chives before, but when I saw them in the grocery the other day, I picked out a bunch on a whim.
Chinese style chives are reminiscent of green onions, but with a much milder and very slightly peppery, garlicky flavour that pairs well with all kinds of meat and seafood. Unlike regular chives, Chinese chives have thicker flat leaves and are arm-length.
This dish is my twist on beef and chive stir fry. It's a quick and easy way to mix up your usual weekday dinner fare and something that now I've discovered its easiness, is something I'll make more often!
- Half a dinner plate full of green chives, chopped into finger-length pieces
- Half of a large yellow onion into slices
- 1 package of stir fry beef slices, cut into strips
- 1 large clove of garlic, diced
- 3 tbsp soy sauce
- 1 tbsp 5 spice sauce
- 1 tsp sesame oil
- 1 tsp cornstartch
- 2 tsp hoisin sauce
- 1 pinch white pepper
- 2 tbsp vegetable oil
- 1 tbsp Chinese cooking wine (or white wine)
In a large bowl, combine the beef, soy sauce, 5 spice sauce, sesame oil, cornstarch and hoisin into a bowl and mix well. Put aside while you prep the other ingredients.
In a medium-hot wok, add 1 tbsp of oil, then the onions and garlic. Fry until onions become transparent and then add the chives and 1 tbsp cooking wine. Stir fry for another 1-2 minutes until the chives become very pliable and a bright green, tossing them often. Scoop everything out into a separate dish, creating a smooth layer.
Add the rest of the oil to the wok and then pour in the beef. Stir fry for 3-4 minutes until beef is tender and cooked through. Layer on top of the chives and eat!
This recipe serves 2 people with enough leftover for lunches and takes about 30 minutes from start to finish. Enjoy!
